How do you set the gun to dry fire, as in shooting with no air when there is a full cylinder in place?

Just like a Styer , cock the bolt , bring it forward till you feel the first mechanical resistance .

You open the loading gate all the way back to cock the trigger, then close it not quite quite completely, only to where you feel some resistance.
