I think a Les Baer is a great place to start. You can shoot it as is, without spending additional funds, for a long time before you're good enough to need to spend more money making it even more accurate. You can get a used Baer on Gunbroker for a good price or off of Calguns.net. They show up on Calguns regularly and then you save the cost of an out of state transfer.

Another CA legal choice is a Dan Wesson Pointman 7. Its a beautifully made gun and I believe as accurate as a Baer. These are more rare, but I bought mine off of Gunbroker for a GREAT price. Never regretted it. I replaced the rear sight with a Burris Fast Fire III. I couldn't bring myself to drill into that beautiful pistol. Not as elegant a solution, but it seems to work great.

I'm picking up my new Sig 1911 Target this week. Shot a range copy and liked it. Plan to get the trigger pull adjusted to 3.5lb and recoils springs reduced immediately (for my reloads), will get Jon to change barrels/accurize later when he has time. I like that both front and rear strap are checkered, plus decent adjustable sights.
